The Short Version
How we got here
Seven years, four milestones, zero shortcuts.
2019
We bought seven hectares of eighty-year-old trees from a retiring grower who made us promise not to ruin them.
2021
First press under our own name. Forty cases. Sold out from a folding table at the village market.
2023
Built the mill next to the grove, cutting branch-to-press time from a day to under six hours.
2026
Two vinegars, four oils, and a stubborn refusal to blend. Still one grove.
